Baking at home can be one of life's greatest pleasures but even for those who have taken the first steps it can seem daunting and time consuming.  The aim of Tori's courses is to help you discover the fundamentals of different national/regional baking.  You will cover the principles of mixing, fermentation/proving, shaping and baking process as well of lots of tips and tricks to problem solve and help you fit baking your own real bread into your everyday life.

All courses will run from Noke Lane Bakery.  They will typically run from 9.30am to 4.30pm/5pm and will include a light lunch (soup and salad) and all refreshments (tea, coffee and juices).  You'll be able to take all your baking home in a bespoke bag with your recipes and a couple of other goodies to help you continue your baking at home.

Class sizes are small (max 4 adults) to ensure a relaxed informal atmosphere and plenty of opportunity to chat about baking or read the myriad of baking books kept in the bakery.
Examples of courses planned are:
  • French bakery - Brioche, Baguette and Pain de Campagne
  • Italian bakery - Ciabatta, Focaccia and Pugilese
  • English bakery - Classic white loaf, Tea Cakes and Chelsea buns
  • Viennoiserie - Croissant/Pain au Chocolat and Danish pastry
  • Nordic bakery - Classic rye loaf, Cardamom buns, crispbreads
